The European Food Safety Authority (EFSA), on 8 April 2009, launched a public consultation on draft guidelines for the safety evaluation of food enzymes. Enzymes may be added to food to perform a technological function in the manufacturing, processing, preparation, treatment, packaging, transport or storage of it.
