The Panel on Contaminants in the Food Chain (CONTAM) of the European Food Safety Authority (EFSA), on 4 August 2008, published an an opinion on suitable indicators for the occurrence and toxicity of polycyclic aromatic hydrocarbons (PAHs) in food. PAHs are chemical compounds that are primarily formed by incomplete combustion or heat-induced decomposition of organic matter. A number of them are genotoxic and can cause cancer.
